Observation (CORRECTED DURING INSPECTION): Ice baths used to store food condiments for lunch preparation. Insert cooler is off and staff informed EHO the unit is broken.
CORRECTED DURING INSPECTION - items returned to cooler unit.

Corrective Action(s): Ice baths are not intended for long term storage of potentially hazardous food items as they can not keep items cold enough.
Insert cooler must be repaired or new one purchased.
Until such time as cooler unit is repaired or new unit acquired facility can use ice baths for short term storage of food items. If food items reach temperatures above 4 degrees Celsius return to cooler unit or discard. Use smaller portions that will be used up in one hour's time.

- Lower shelf of brown cart
- Lower shelf in food preparation area storing vinegar and oil
- Lower shelf in server station storing racks of wine glasses and water glasses.

Ensure the lower racks/shelves are routinely inspected for rodent droppings and cleaned/sanitized as these areas are frequently contaminated with rodent droppings.

Observation: Some rodent droppings observed. Evidence of rodents much less than previous inspections. All traps inspected by EHO empty. Significant improvements in level of infestation in kitchen from previous inspections.

Corrective Action(s): Continue to clean and sanitize frequently. Continue to trap and monitor for rodents. Continue to keep doors closed and tight fitting.
Use 200ppm Chlorine or equivalent to sanitize areas affected by rodent droppings.

Observation: Main food preparation insert cooler is broken and according to staff has been broken for approximately one month.

Corrective Action(s): Facility requires repair or replacement of cooler IMMEDIATELY. This unit is required for operation of facility. Potentially hazardous food items can NOT be maintained at temperatures of less than or equal to 4 degrees Celsius in ice baths for long periods of time.
