Code 302 noted on Routine inspection # NO NUMBER of Oct-01-2019 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Moyer Diebel dishwasher final rinse sanitizer residual measures zero ppm Cl. The residual must measure at least 50 ppm Cl. The sanitizer reservoir is empty. Correction: Replace the empty sanitizer reservoir with a new one and ensure that the sanitizer cycle measures at least 50 ppm Cl.

Comments

The servery dishwasher is presently not in use. The commercial kitchen dishwasher is being used. Renovations are planned for the servery which will include replacement of the dishwasher. No recommendations.
