[s. 14(2)] Observation (CORRECTED DURING INSPECTION): The mushroom display cooler had an ambient temperature of 10-15 degrees Celsius and the internal temperature of several food items was 13 degrees Celsius. Food must be held at a temperature of between 1-4 degrees Celsius. Corrective Action(s): The following foods were discarded: -9 packages of bean sprouts. -4 wonton wraps -4 egg roll wraps -30 packages of noodles -20 packages of sliced mushrooms. The remaining foods were not potentially hazardous foods. Violation Score: 5

Comments

Produce Section: Quats sanitizer was at 200 ppm at the 3-compartment sink. Hand sink was supplied with hot and cold water, soap and paper towels. General: All coolers were < 4 C, with the exception of the mushroom display cooler noted above. All freezers were < -18 C. Temperature records were up to date. No evidence of pests. A professional pest control company is onsite regularly, reports available for review. General sanitation was satisfactory.
