Observation: No sanitizer or detergent available at dishwasher - no sanitizer detected at the plate with test strips
Correction: Ensure dishwasher is supplied with detergent and sanitizer for proper dishwashing with the mechanical dishwasher. 50 ppm - 100 ppm chlorine sanitizer solution must be available for the final rinse and detectable with test strips.
*Ensure extra jug of each chemical is available to prevent this from occurring in the future
*Replace sanitizer and detergent jugs

***Operator will pick one up as soon as possible

-Sanitizer and detergent jugs were noted at dishwasher - 100 ppm chlorine noted at dish
*Replacement chemical jugs available evening of May 28, 2021
-Sanitizer spray bottle at front properly labelled - operator will replace spray bottles with sanitizer buckets
-Cardboard liners removed from dry storage shelving and replaced with plastic tray/containers
-Damaged wooden table has been removed
*Operator will discuss with management the use of the 3 sinks (hand sink, prep sink and dishwashing sink)

**Fetal alcohol stickers provided for washrooms, manual dishwashing and handwashing signage provided for kitchen
