Observation: Found excess amounts of cardboard boxes being stored on-site. This will attract and harbor pests.
Corrective Action(s): Remove and discard all extra cardboard, boxes, buckets, etc. to discourage pests from living and breeding on-site.

Observation: 1) There is accumulated dust on the floor (under the rollers), on top of the oven, and the exhaust system (at the end of the over).
2) There is mice droppings on the floor around the pile of broken down cardboard boxes.
Corrective Action(s): Wash and sanitize the surfaces to remove the dust and droppings. Increase the frequency these areas are being cleaned.

Observation: Observed bait box under the oven, which contains rodent poison. Rodents will handle the poison and spread the poison to food surfaces when they walk around.
Corrective Action(s): Remove the bait box and stop using chemical means to rid of rodents. Only mechanical means shall be used to rid of rodents (snap traps, glueboards or catch-all-trap). Speak with your pest control technician about this.

A routine inspection was conducted, the following observations were made:
- Cooler was 4C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- FoodSafe certified staff present.
- All foods stored in food grade containers; covered; labeled; date coded; and foods stored 6" off the floor on pallets or racks.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No expired foods in use. FIFO rules being followed.
