209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1) Found frozen, raw chicken breasts thawing in the walk-in-cooler, on a shelf above RTE foods. Raw chicken juices could drip on foods and contaminate it with bactera.
2) Found containers/packaged of food (rice cakes, sugar, salt), in the dry storage area, not covered. The food could become contaminated with dust or bacteria.
Corrective Action(s):
1) Relocate the thawing raw chicken to the lowest shelf, or on a separate shelf away from RTE foods. During the inspection, staff moved the raw chicken to the lowest shelf in the cooler.
2) Place lids on the food containers and keep them on, until food is needed. Replace the lid immediately one the food is obtained. Wrap the open packages of food with saran wrap or place in a covered food container. During the inspection, lids were placed on the food conatiners, and staff were wrapping the opened rice cake packages with saran wrap.

Observation:
Found cobwebs around the legs of work tables, across from the steam kettles. This is an indication that cleaning of these areas hasn't been done in a long time.
Corrective Action(s):
Clean the legs and underside of the work tables. Ensure this is done on a regular basis.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -15C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle had a temperature of 71.1C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle and cloth buckets was 200ppm.
- All foods (other than those mentioned) were stored in food grade containers; covered; labeled; date coded; stored in groups so proteins are separated or below RTE foods; and stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use. FIFO rules being followed.
- The pipe under the 2-comp sink in the jug washing area has been fixed, it no longer leaks.
- No signs of pests.
- FoodSafe certified staff present.
- General sanitation level is good, other than the mentioned area.
**Exhaust canopy service sticker indicates professional cleaning should of been done in September 2019. Please provide confirmation this was completed (invoice or email from WSI). Highly recommend having the professional cleaning company placing an updated service sticker on the unit each time, to prevent missed cleanings and verification when cleaning was completed.**
