205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. Two stainless steel trays were holding cold potentially hazardous foods in ice bath at room temperature. Items included cooked bacon, cut vegetables, and eggs. Ice bath only covered bottom of inner trays.
2. Cold potentially hazardous foods in the broken cooler at ~10 C or lower. Items include, yogurt, baked products with cream
Corrective Action(s): Required operator to move those items into a cooler at 4 C or lower if these items were at 4 C or higher for less than 2 hours accumulative. If longer, items to be discarded. Discussed that items can be left at room temperature during busy times only and the ice bath must cover all sides of inner container fully. When not in use, all potentially hazardous foods must be stored in a working cooler at 4 C or lower.

Observation (CORRECTED DURING INSPECTION): Refer to Code 308:
Dishwasher not in good working order; operator indicated that manual dishwashing is done until dishwasher can be replaced.
Corrective Action(s): Required operator to perform manual dishwashing in the two compartment sink. One sink to be used for washing and risning and the other sink for sanitizing utensils. Re-usable items are utensils and juicer machine only. Only take out containers being used. Bleach available on site for sanitization.

Observation (CORRECTED DURING INSPECTION): Handwashing station located beside coffee espresso machine did not have liquid soap and paper towel.
Corrective Action(s): Required operator to always have liquid soap and paper towel at the handwashing station.

Observation (CORRECTED DURING INSPECTION): Croissant doughs in the back and cookies near front display were stored without proper covers. All food items must be properly protected from all sources of contamination.
Corrective Action(s): Required operator to provide covers for croissant doughs in the back and trasfer all cookies and other baked goods into a display case.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Following observations made:
1. Garbage bags on the ground in the storage area. Operator explained that due to issues with garbage disposal for the buidling, operators come pick up the garbage everyday for disposal.
2. Food debris accumulation observed throughout the facility.
Corrective Action(s): Required operator to:
1. Store all garbage in a secure bin until it can be disposed. All garbage and organic bins must be coverd and protected as they are pest attractions.
2. Perform thorough cleaning throughout the facility to remove all food debris

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Two equipment not in good working order:
1. Dishwasher is not in good working order; staff onsite explained that there is a leak from the dishwasher whenever it is used. Operator indicated that a new dishwasher is in order and expected to arrive on Tuesday April 6 for installation.
2. Sliding doors for a display cooler is broken. Sliding door is not able to properly close so cold air escapes and the door falls off when it is opened.
Corrective Action(s): Required operator to:
1. Replace the dishwasher as soon as possible. Until dishwasher can be replaced, manual dishwashing at two compartment sink must be done. Bleach available on site for proper sanitization of utensils.
2. Sliding door must be fixed to ensure it can keep cold air in. Temperature measured to be at ~10 C.

Observation: Tiles at step-up in main servery area broken. Operator indicated that tiles are to be replaced soon.
