Observation: Potentially hazardous food items stored outside of cooler unit on ice packs. Internal temperatures of greater than 4 degrees Celsius observed. Cooked eggs at 8 degrees Celsius and raw seafood at 9 degrees Celsius.
CORRECTED DURING INSPECTION
Items returned to cooler unit.

Correction: Ice packs should not be used to keep food items cold. The cooler units were designed for this purpose and the only approved method of cold holding storage during the initial inspection.

Comments

Ice packs remain at facility. REMOVE ICE PACKS IMMEDIATELY. This was the instruction from Friday. Ice packs are not permitted as a cold holding storage option. This was discussed during Initial inspection and repeated on Friday. The ice packs are to be removed from facility TODAY.

ITEMS CORRECTED:
- Cleaning has occurred
- Food prep occurring in designated food preparation sink. Dishwashing not occurring at this sink at time of inspection.
