Observation (CORRECTED DURING INSPECTION): Ambient temperature of hot-holding unit at point-of-service counter at 115F (left side) and ~ 130F (right side). Internally probed items were as follows:
- Pizza at 130F
- Chicken wings at 115F
- Corn dogs stored at approximately 115F

Chicken wings were present on the left side of the cooler, which was not permitted (see previous report JMAA-B6A2PY conducted on Nov 6, 2018).
Corrective Action(s): Pizza and corn dogs were voluntarily discarded at time of inspection. Chicken wings were cooled and placed in the freezer.

As instructed in the previous report, you were not allowed to use the left-side of the hot-holding unit. At time of inspection, entire hot-holding unit was not able to hold at 140F (60C) or above.

Refrain from using the hot-holding unit until a follow-up inspection has been conducted by the health inspector to verify that it can maintain 60C/140F or above. No exceptions.

Comments

- Follow-up inspection to routine (RPT#: JMAA-B6A2PY) conducted yesterday - spot check
- Entire hot-holder was not maintaining 140F (see inspection report above), yet it was being used. Manager stated that hot-holder was functional this morning, but no temperature logs for today were present at time of inspection
- Work order has been placed to service the hot-holder
- EHO discussed with manager the issue with cold-holding creamers on ice. Manager states that a work order has started for obtaining a cold-holding creamer dispenser. In the interim, manager has presented a plan to log the placement of ice into the creamers every 2 hours until a dispenser can be obtained. No ETA for dispenser available yet

The EHO will come back throughout this week to determine that 1) the hot-holder is not being used and 2) an updated log is present for placement of ice into the creamer bins every 2 hours. Email the inspector with a timeframe for when the dispenser will be obtained as well as the log sheet and instructions for staff members for cold-holding on ice

Further infractions will result in additional enforcement including correction orders and/or violation tickets.
