Hand sinks provided with constant supply of liquid soap and paper towels.
Quats sanitizer (in spray bottles & 3 comp sink) measured 200 ppm or greater.
Walk-in coolers were at 3-4 deg C.
Prep line coolers were at 1-3 deg C.
Note: Sandwich prep cooler is out of door and waiting for a part. No food stored in this cooler.
Display coolers were at 2-4 deg C
Hot holding for rice was >65 deg C.
Hot holding for chicken, wedges, onion rings and pot pies 60-65 deg C.
Hot case for whole rotisserie = 65 deg C (internal temp.)
Note: Closely monitor the half rotisserie chicken in the hot case. Ensure they maintain 60 deg C minimum.
Keep for less than two hours if internal temp is not at 60 deg.
Hot holding buffet:
*Chowmein/fried rice = 60-65 deg C
*Chicken wings/ sweet and sour = 60-62 deg C.
*Salads were at 3-5 deg C.
Temperature logs were available and up to date.
Pest control monitoring in place. No signs of pests noted at time of inspection.
General sanitation was satisfactory at time of inspection.
Note: Health permit still missing. Provided operator with a "Replacement Health permit" form.
