Observation (CORRECTED DURING INSPECTION): Large pot of lamb curry observed to be stored in the walk-in cooler measured at 24.3C internal temperature. Operator informed that it was made last night.
Corrective Action(s): Discard the aforementioned item. All food must be cooled from 60C to 20C within 2 hours and 20C to 4C within 4 hours. Acceptable cooling method include cooling in shallow containers, use of cooling wand, or use of ice bath.

Observation (CORRECTED DURING INSPECTION): The following were stored in the front display cooler at 26.2C air ambient temperature:
-1 tray of barfi and milk cake
Corrective Action(s): Discard the aformentioned items. All cold potentially hazardous foods must be stored in a cooling unit able to hold an air ambient temperature of 4C or lower.

Observation (CORRECTED DURING INSPECTION): Observed staff to wash knife with soup and water. No sanitation step used. No chlorine sanitizer available for the back kitchen area to clean and sanitize food contact surfaces.
Corrective Action(s): Clean and sanitize knife. Prepare chlorine sanitizer to measure between 100-200ppm for the kitchen area.

Observation: Grease build-up observed in the exhaust hood vent on the deep fryer, stove area. Last service date was on October 26, 2022.
Corrective Action(s): Clean and sanitize the exhaust hood vent. Exhaust hood vent should be cleaned and sanitized 2x/week to prevent build-up of grease. Corrected by: November 7, 2022

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottle at the front servicing area measured at 100ppm. 3-compartment sink available. High-temperature dishwasher measured at 71.1C final rinse temperature.
Prep cooler, display cooler used to cold-hold potentially hazardous foods, walk-in cooler measured at 4C or lower. Walk-in freezer measured at -18C.
Observed scoops outside of dry good bins. Observed food to be covered in the walk-in cooler, preparation coolers.
