Back Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers (egg and walk-in) maintained below 4 degrees Celsius.
Freezers (3-door standup and walk-in) maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Dry storage area organized.
- High temperature dishwasher sanitizing with 81.2 degrees Celsius at dish level after final rinse cycle.
- 3-compartment sink available for manual warewashing.
- Concentration of QUATs sanitizer at dispenser and in pails = 200 ppm. Wiping cloths stored in sanitizer solution - good.
- Ice machine maintained in a sanitary condition. Ice scoop stored in designated container.

Front Area:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
All coolers (under-counter and sandiwch prep) maintained at or below 4 degrees Celsius.
All hot holding units maintained above 60 degrees Celsius.
- Concentration of QUATs sanitizer in all pails = 200 ppm.
- Ice scoop for ice well stored in a designated container.

Overall:
- All food items covered and protected from contamination.
- All food items stored at least 15 cm off the floor.
- No pest activity noted at the time of inspection.
- Staff washroom clean and sink fully equipped with liquid soap, paper towels and hot/cold running water.
