Prep cooler, cooler by triple sink, and bar coolers are at <4 C - good.
Hot holding is all above 60 C.
Cooling using cold water bath - good.
Hand washing station in bar, food prep area, and main kitchen have liquid soap and paper towels.
Main kitchen dishwasher has a chlorine sanitizing rinse.
Quats sanitizer used on counters etc.
Premises is very well organized and is being kept very clean - good.
