Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1. Sanitizer bucket is not being used and wet wipping rags stored near hand sink was at 0ppm QUATS.
2. All QUATS Solution were expired on 2020/11/15
3. All dough making utensils and equipment are only being washed once per day after closing.
Corrective actions:
1. Always Store wet used rags Should be Stored in Sanitizer Solution to prevent microbial Contamination.
2. Replace all expired QUATS Solution
3. Ensure all utensils used are being washed and Sanitized at least once every 4 hours.

-butter not stored at room temperature. Ensure butter is only warmed in microwave when needed and placed in food warmer for hot holding.

-wiping rags stored in 200 ppm Quat sanitizer
-New Zep brand Quat sanitizer provided, ensure instructions are followed correctly to prepare 200ppm Quat (2ml/litre water)
-Handsink has stocked soap dispenser.
-Food utensils no longer stored in bulk food ingredients
-New food warmer installed, temp 80 deg. C
-All chemical spray bottles clearly labelled as to their contents.
