Observation: Improper cooling practices observed. Large pot of butter chicken sauce was cooked last night and left on stove top with lid all night. Inspection began at 11am.

Corrective Action(s): Cool hot items in the following manner:
- In shallow pans in walk in cooler unit
- With ice wand
- In ice bath.

Ensure proper cooling procedures are followed: 60 degrees Celsius to 20 degrees Celsius in 2 hours and 20 degrees to 4 degrees Celsius in 4 hours.

Observation (CORRECTED DURING INSPECTION): Large vat of butter chicken sauce measured to be at 49-52 degrees Celsius. Item was cooked last night and left on stove top overnight. CORRECTED DURING INSPECTION - item was adulterated by Health Inspector and to be discarded by staff during the day (large pot requires two people to carry and only one staff member present at time of inspection.)

- Two functional sink plugs available for use
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Good hand washing practices observed
