Corrective Action(s): Until level of sanitizer can be increased, sanitize all utensils in the 3 compartment sink using quat as the sanitizer. Ideally the concentration of chlorine in the dishwasher final rinse should be approx. 75ppm.

*Update monitoring log to add the chemical sanitizing dishwasher. Staff must record daily both the final rinse sanitizer concentration as well as the wash water temperature. Sanitizer concentration must be not less than 50ppm chlorine. Wash water temperature must not be less than 120F.
