Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature logs were maintained and found up-to-date.
- Walk in cooler recorded at 2.3C
- Walk in freezer at -15.7C
- Stainless steel cooler at 4.8C
- Small prep cooler at 3.9C
- Coffee station - Glass cooler at 4C and cooler compartment of white refrigerator at 4.8C
- Freezer compartment at -12.7C
- Hot holding units above 60C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations (kitchen & coffee station) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- High temp mechanical dishwasher reached 78.6C on dish level during rinse cycle.
- Sanitizer logs were maintained and found up-to-date.
- Equipment including kitchen hood, ice machine were maintained in good sanitary condition.
Once the cutting boards are not smooth and food contact surface is worn out, please replace them with new ones.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.
Keep an eye for any new rodent activity and clean & disinfect the affected area regularly.

Administrative:
- Operating permit was posted in a conspicuous location.
- Manager has valid FoodSafe Level 1 certificate (March 18, 2024).
