-Premises maintained in a sanitary condition
-Hot and cold running water available
-Kitchen handsink supplied with liquid soap and paper towel
-Bleach sanitizer solution (200ppm) present in spray bottle for sanitizing food contact surfaces.
-High temperature dishwasher functional and met sanitizing temperature requirement. Final rinse was 71C at dish surface. Operator has min/max thermometer to check temperature.
-Cooler were at an acceptable temperature:
-Kitchen 3 door cooler 2C
-Samsung cooler (gym) 0C
-Fridge/freezer (gym) 4C/-12C
-Thermometers present for monitoring cooler temperatures
-Freezers were functioning and maintaining product in a frozen state.
-No signs of pest activity. Pest Control contract in place with monthly service.
*Reviewed temporary food permit application with Youth Pastor, Caretaker and Office staff for upcoming event on 16-June-2018. Reviewed items being prepared/sold and storage capacity (refrigerated/frozen/hot holding). Reviewed proper cooling practices for advance preparation. Verified handwashing sink present in room where kimbap will be prepared.
