Observation:
The interior lid of the chest freezer, in the office, is cracked. Pieces of plastic could drop into food.
Corrective Action(s):
Replace the lid or the whole freezer unit so all surfaces are durable, smooth, sealed, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -17C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Ensure built up ice in the chest freezers are removed, especially those around the lip. Built up ice on the lip will prevent the lid from closing tightly and cold air will constantly leak out.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle was 200ppm.
- 3-compartment sink present for dishwashing. Dish soap and sanitizer present for manually dishwashing. Drying rack present for air drying.
- FoodSafe certified staff present.
- No expired foods in use. FIFO rules being followed.
- Hair nets in use and staff wash hands frequently.
- General sanitation level is good.
- No signs of pests. Month pest monitoring done by a professional company. Reviewed monthly reports/invoices, all in order.
- Foods stored in food grade containers; covered; labeled; date coded; in groups with raw proteins separate or on lowest shelves below RTE foods; and 6" off the floor on shelves, racks or platforms.
- Re-organization of the premises has occurred, food flow is better.
