Observation: Sanitation: Food/debris noted along walls - behind equipment. (ie: dough mixer/scale, etc) Food storage bins - no lids being used. Food debris noted inside containers.
Corrective Action(s): Cleaning of "hard to reach" areas is to be conducted on a routine basis. (ie: behind/under equipment, etc) Storage bins are to be kept covered. Clean bins.

- Temperature Control: No concerns noted this date. Monitoring is required to be conducted. Gauges noted.
- Manual Dishwashing: 4 Step - Quat based sanitizer: Sign noted. Monitor daily. Air in lines discussed.
- Ensure all food contact surfaces are washed and sanitized after use or in a timely manner. All implements are to be stored in a sanitary manner. (ie: above potential contamination.)
- Wiping cloth/spray bottle storage: Quat based sanitizer. Monitor. Solution is to be changed routinely. Cloths,used on food contact surfaces, are to be kept completely submerged in a sanitizer at all times.
- Food Storage: Any opened food/ingredients are to be kept stored in covered, food grade containers. Single use containers are to be kept stored upside down. Leave gaps along walls for an effective rodent control program,.
- Chemical Storage: Ok.
- Sanitary Facilities: Ok.
- Sanitation: Refer to Violation Notes. Maintain routine cleaning schedules, including "hard to reach" areas. (ie: behind/under equipment - Under dry prep storage unit/window sill)
- Staff Hygiene: Reviewed.
- Structurally: Ok.
- Pest Control: An active rodent control program is in place. Pest Control Reports are required to be reviewed by all store departments.
- Garbage,Recycling and Compost Storage: All items are to be stored in covered, rodent proof containers. All garbage is to be removed in a timely manner. (ie: Nightly)
- Food Safety Plan and Sanitation Plans are on site for review. Staff are required to be trained according to these policies and procedures.
