Observation: Blood stains and spills were observed throughout the walk-in cooler.
Corrective Action(s): Clean the walk-in cooler regularly and ensure that it is maintained in good sanitary condition to prevent the risk of potential food contamination.

Comments

Routine inspection conducted and the following observations were made:

- At the time of inspection, all equipment were in use.
- Separate workstations/prep tables designated for different types of meat.
- Meat processing room measured at 8C
- Walk-in cooler at 1C
- Stand up freezer at -16C
- Front coolers were maintained at 4C or less
- 3 compartment sink used for warewashiing. 200ppm QUATS measured in 3rd sink.
- 200ppm QUATS sanitizer bottle used for sanitizing meat slicer, meat grinder, band saw and prep tables.
- Handwash sink available and has adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Hose available in the meat processing room and all the equipment and room are washed and sanitized at the end of the day.
- All food products were stored at least 6 inches off the floor.
