Observation:
1) The PCExpress Dept. had accumulated food debris under upright coolers & freezers, and under shelving racks. The debris is found along the walls, possibly it has been pushed there when sweeping. This will attract pests.
2) The Dairy walk-in-cooler had broken eggs on the floor. This will attract pests.
Corrective Action(s):
1) Immediately have staff sweep the floor under all coolers, freezers and shelving racks, ensuring they reach all the way to the wall to remove the food debris. Ensure staff are on their hands and knees checking they have removed all the food debris. Increase the frequency these areas are cleaned.

2) Immediately have staff mop and scrub the floor in the Dairy walk-in-cooler to remove the raw broken eggs on the floor.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezer below -18C; thermometer present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water in the "Salad Bar" station, and the back room "Produce Processing" room.
- Quats sanitizer was 200ppm, and test strips present.
- Sanitation level is good. No signs of pests. Fly lights present and away from food processing areas.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on racks, platforms or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
