Observation (CORRECTED DURING INSPECTION): * Wiping rags found on counters in some food prep areas. This is unsanitary practise as rags must be kept in sanitary condition (eg. in sanitizer between use). Operator addressed this immediately once discussed
Corrective Action(s): * Ensure ALL wiping rags kept in sanitary manner (eg. sanitizer bucket between use) ready to use to sanitize food contact surfaces

Observation: * Build up of grime/mould found inside ice machine along filter area that requires regular maintenance and cleaning. Also, build up of grime/debris found behind/under prep line cooler along wall/baseboard(looks like it has been there for a while) that requires regular sanitary maintenance
Corrective Action(s): * Ensure ice machine cleaned/sanitized properly and on regular basis to maintain sanitary conditions. Also, ensure all areas of kitchen cleaned regularly and maintained in sanitary condition, including under/behind equipment
