205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food was recorded above 4C. No temperature logs in place to verify the time-temperature control. Following inserts were probed at the time of inspection and the internal temperature was recorded:
- Diced tomatoes in bottom unit at 9.1C
- Hummus in top unit at 12.6C
- Tahini in top unit at 10.8C
- Diced onions in top unit at 14.8C
Spoke with the Person Incharge regarding the issue and staff discarded all potentially hazardous food stored in the prep cooler. Until the prep cooler has been repaired and able to maintain a temperature of 4C or below, staff will be following 4 hour time-temperature control procedure. Staff is aware to store small amount of potentially hazardous food in the prep cooler that can be used within 4 hours. After 4 hours, the left overs will be discarded. First round started at 4:00PM, staff temporarily closed the restaurant to re-fill the cooler with new containers of food. Next refill at 8:00PM.
Corrective Action(s): Ensure that all cold potentially hazardous food is stored at or above 4C.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Half filled rice warmer was recorded an internal temperature of 47.8C. Staff on duty said the warmer is turned off for 5 minutes then on again to keep the temperature maintained. Rice was cooked more than 4 hours ago. Staff discarded the cooked rice at the time of inspection.
Corrective Action(s): Ensure that all hot potentially hazardous food such as cooked rice is stored at a temperature of at least 60C or above.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer solution was prepared for sanitizing food contact surfaces such as prep tables. Staff prepared bleach solution at the time of inspection and recorded at 200ppm.
Corrective Action(s): Please ensure that an approved food grade sanitizer is available at an acceptable concentration for adequate sanitizing of food contact surfaces during facility operation.

Observation (CORRECTED DURING INSPECTION): Lids were stored in the handwash sink located in the back and the handwash sink was not readily available to staff for handwashing. Staff moved the lids to dishwashing area at the time of inspection.
Corrective Action(s): Please ensure that all handwash sinks are accessible to staff for handwashing and not obstructed.

Observation: 1. Front prep cooler recorded at an ambient temperature of 10.7C. No temperature records available to confirm the functioning of prep cooler. EHO also noted that two inserts were missing in the prep cooler and the gap was covered with lids. This may have resulted in inadequate cold air circulation.
2. Stainless steel freezer in the back was observed to have issues with fan and a pile of ice was noted on the stop shelving of the freezer.
Corrective Action(s): 1. Since prep cooler is primarily used for food prep in the front service area. Please have it serviced immediately and ensure that it is able to maintain a temperature of at least 4C or lower.

Routine inspection conducted.

- Temperature of walk in cooler recorded at 3C
- Front beverage cooler at 2C
- Front drawers recorded at 0C
- Stainless steel freezer at -18C
- All handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink used for manual dishwashing. 200ppm QUATS recorded at dispensing unit.
- Food was stored at least 6 inches off the floor.
- Permit posted at the front.
- No signs of pest activity observed.

A follow up inspection will be conducted tomorrow, August 22, 2023.
