Observation (CORRECTED DURING INSPECTION): Area underneath dishwasher still contains some old rat droppings.
Corrective Action(s): Rat droppings removed with bleach solution at time of inspection. Ensure that you continue monitoring for any rodent droppings or signs of rats (e.g. gnaw marks on wiring, trapped rats, urine stains, holes in packaging / dry storage items, rub marks on walls and surfaces).

Comments

Follow-up inspection to routine conducted on November 26, 2018 (RPT#: JMAA-B6VUWD). The following observations were made:

- All items inside walk-in coolers and prep coolers adequately covered at time of inspection
- Ice machine is now in sanitary condition
- No cardboard used to line shelving in walk-in cooler
- All sanitizer spray bottles present and labelled according to their location in the restaurant. Spray bottles contain approximately 200 ppm chlorine residual - good
- Cook line, ventilation slats, area under dry storage is now in sanitary condition
- Peeled onions are no longer stored in dairy crates - good. Reminder: Dairy crates are not a food contact surface
- Scoops with handles are now present in the walk-in cooler, stored outside of food containers

Operator has also agreed to follow the inspector's recommendation: plates for long-term storage will be kept in a secure plastic container. There is no longer an accumulation of aluminum cans inside the kitchen.
