Comments

- Both hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Coolers were measured at 4C or colder
- Freezer measured at -20C
- Hot held food items in service area were measured to be between 55C and 65C. Only small portions held in inserts - food in service line is turned over every 2 hours.
* Reminder that stoves must be turned on/lit when large pots of food are held on them. All hot food must be held at 60C or hotter at all times.
- Small portion of yogurt held in service line as well - kitchen volunteer had just switched to a new portion at beginning of inspection.
- Food storage practices satisfactory. All food stored covered.
- Dry ingredient bins and dispensers maintained in sanitary conditions
- High-temperature dishwasher reached 73C at dish surface during rinse cycle - good
- Bleach available - ensure to mix 1 tsp bleach with 1 litre of water for proper concentrations.
- General sanitation is good
- No other signs of pests noted at time of inspection.
- Discussed the use of beard restraints. Some committee members in kitchen had beards tied/pinned back at time of inspection.
