*General sanitation excellent in both deli and bakery areas. No evidence of pest issues observed during inspection.
*Quat sanitizer available at 200ppm in dish sinks and spray bottles. Note: ensure a sanitizer spray bottle (in addition to the sanitizing sink) is available at all times in the bakery area.
*Hand sinks equipped with warm water, liquid soap and paper towels. Note: hand sink at far side of bakery area was running very hot (54 C) - ensure water is adjusted to a more comfortable temperature by tomorrow (19th August 2017).
*All cooler and freezer temperatures satisfactory. Thermometers available for each unit.
*Roasted chicken cooking temperatures are recorded on a digital system. No change in procedures or temperature checks.
*Chickens in warming unit measured at 60 C or higher.
*Meat slicers maintained in clean condition.
*Other utensils, knives and trays/containers maintained and stored in clean condition.
*Three-compartment dish sinks in both sections in working order. Staff appear to be following full 3-compartment warewashing methods.
*High-temperature pan washer in bakery back room reached a final rinse temperature of 77 C at the pan level.
*Note: proofer on right hand side of main bakery oven is not in use.
*Opened deli products in display case are marked with best before/use-by dates.
*Food Safe training requirements met a time of inspection.
