*Reminder about storing wet wiping clothes in 100ppm sanitizer between uses.
Dry storage room flooring properly cleaned up.
Bulk food scoop storage is adequate.
Staff footwear is proper (running shoes, closed toe).
Staff belongings stored in the back area.
Ceiling lights replaced and covers are in place.
Sushi bar thermometer added. Nothing stored in sushi handwash stations.
Temperature logs are in place; discussed taking corrective action when temperatures are inadequate.
