- Under cold, running water at 4C or colder
- In a microwave/as part of the cooking process.

Meatballs were still frozen at time of insepction. Placed in refrigerator at 4C or colder.

Comments

- Hand washing sink in Deli Department was properly supplied with hot and cold running water, liquid soap, and accessible paper towels. Ensure the paper towel dispenser is in use and in good working condition (see violation code 308 above).
- High-temperature dishwasher reached 75C at the dish surface during final rinse cycle - good.
- Three-compartment sink available for manual warewashing as well. Sink plugs available.
- Quat-based sanitizer for sanitizing food-contact surfaces available at 200 ppm. Good. Test strips available for use.
- All coolers measured at 4C or colder. All freezers measured at -18C or colder.
- Hot-held food items measured at 60C or hotter.
- Temperature logs well maintained and up to date. Accurate thermometers available.
- Deli slicers were in use at time of inspection. Discussed cleaning and sanitizing procedures with staff - OK.
- Food storage practices satisfactory.
- General sanitation satisfactory
- No signs of pest activity noted in department at time of inspection.
