Observation: Pizza trays and pans have food residue on along the edges.
Corrective Action(s):
Re-wash all equipment. Ensure that all equipment is throughly washed, rinse and sanitized before using again.

1) Scrape off leftover/encrusted foods
2) Wash - with soap and clean and potable water
3) Rinse - with clean potable water
4) Sanitize - submerge all equipment in a 100ppm bleach solution for a minimum of 2 minutes
5) Equipment must be allowed to air dry and NOT toweled dry.

Observation (CORRECTED DURING INSPECTION): No paper towels (either in the dispenser or on a spindle) available by the handsink.
Corrective Action(s): Either repair the dispenser or have paper towels available on a spindle. Napkins moved near handsink as a TEMPORARY fix only.

Observation:
Extensive cleaning is required throughout the facility, especially:
- within the prep cooler (food debris observed within, old empty styrofoam containers found)
- within the walk-in cooler (on and under the shelves, on the walls by the fan, the plastic flaps, the metal shelf)
- the exhaust fan by the pizza cooler
Corrective Action(s): All cleaning must be done by the follow-up inspection.
