General: -High-temperature dishwasher reached 74C at dish surface during rinse cycle. Was repaired 2 days ago. -Coolers now equiped with accurate thermometers -All food stored properly covered, no scoops in dry ingredients -Flour under deep fryers has been cleaned. -Ventilation hood was on -No food stored in top right portion of pizza prep cooler.
