203 - Food not cooled in an acceptable manner [s. 12(a)] Observation (CORRECTED DURING INSPECTION): Pot of soup was found in the cooler with internal temperature of 56 deg C. It was cooked, left to cool in the pot for an hour then placed in the cooler. Corrective Action(s): Staff was instructed to follow proper cooling method (shallow pans/ice bath). Ensure to review proper cooling procedure in the Food Safety Plan. Regular cook was away and a temporary kitchen staff was working (Food Safe 1 certified). Post proper cooking and cooling procedures in the kitchen area as reminders. Violation Score: 5 301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] Observation (CORRECTED DURING INSPECTION): No sanitizer solution in bucket available to store wiping cloths at time of visit. Wiping cloth was found on the counter top. Corrective Action(s): Ensure there is a sanitizer solution available to store wiping cloths in the kitchen. Violation Score: 5

Corrective Action(s): Ensure all food items stored off the floor at all times. Violation Score: 3 313 - Live animal on the premises, excluding guide animal in approved areas [s. 25(1)] Observation (CORRECTED DURING INSPECTION): Dog bed was found in the dining room area. A water bowl and a small dog toy was found in the kitchen. No dog at time of visit. Corrective Action(s): No dog(s) allowed in the kitchen or dining room area. Violation Score: 1

Hand sink supplied and accessible Sanitize (quats) measured 200 ppm. Bleach also available Temperature control checks: Refrigeration units at or below 4 deg C Freezers at or below -18 deg C High temp dishwasher reached 78.6 deg C (at plate surface). Temperature log available and up to date Dry storage areas (in the kitchen and in separate room) organized and cleaned Freezer in dry storage room was at -22 deg C Pest control in place - no signs of pests noted General sanitation was satisfactory at time of visit. NOTE: Renovations done throughout the facility (new flooring, painting, etc.) Kitchen has new flooring. Discussion regarding future renovation in the kitchen. This will be itemized during follow-up inspection.
