Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Utensils and dishwasher were note adequately sanitized as they were being washed & sanitized in a low temperature dishwasher that achieved 0ppm of chlorine.
Wiping rags were again noted to be stored directly on food preparation and not in a sanitizing solution.

Follow up inspection conducted.
Chlorine dishwasher unit has been repaired. However, no chlorine was detected during the initial runs. Adjustments were made to the dishwasher by the operator. After the adjustments, a final rinse concentration of 50ppm of chlorine was measured at plate level for 4 consecutive runs at approximately 5 minute intervals. Ensure dishwasher is monitored daily with chlorine test strips to ensure it is in good working order.
Cleaning in the kitchen has been complete.
Under counter cooler has been repaired and ambient air temperature was at 3C.
Re-educated the operator on proper hand hygiene and not to keep large amount of food items at room temperature.

Closure order issued on May 8, 2019 is hereby rescinded.
