Observation (CORRECTED DURING INSPECTION): Prep table cutting board was soiled with debris, with a dirty cloth in the middle.
Corrective Action(s): Prep table was wiped with a cloth immersed inside a sanitizing pail. Store cloths inside sanitizing pails and keep the cutting board area in good sanitary condition after use.

Observation (CORRECTED DURING INSPECTION): 1. Toppings at bottom compartment of prep cooler (pineapples, olives, cheese) were not appropriately covered with a lid.
2. Chicken inside walk-in cooler covered with a loose-fitting tray
3. Large pepperoni sausages in walk-in freezer were placed directly on the shelf.
Corrective Action(s): 1. Toppings and chicken were covered at time of inspection. Remember to use tight-fitting lids that match with the original containers.
2. Pepperoni sausages were transferred onto a tray. Ensure that the pepperoni sausages, once they arrive, are placed in a food-grade container and covered when not in use.

Comments

Routine inspection conducted. Premise is well-lit and generally maintained in good sanitary condition. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 1C
- Prep cooler at 3C (bottom) and 4C (top)
- Beverage cooler at 2C
- Walk-in freezer at -18C
- Temperature logs maintained and up-to-date until September 24, 2019 - good

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and hand dryers in kitchen area and restroom
- Bleach sanitizing pail at 200 ppm chlorine residual
- 3-compartment sink ready for use, 3rd compartment stocked with chlorine solution at 50 ppm
- Onion / tomato rotary cutter, and onion press are in good sanitary condition
- Prep tables are generally well maintained
- Restroom is well maintained and organized

3. Storage
- Food products generally kept at least 6" off the floor
- Chemicals situated in 3-compartment sink area, away from food products

4. Pests
- No recent, visible signs of pest activity at time of inspection
- Last inspection by professional pest control company conducted on Sep 2, 2019. Exterior bait was consumed, but no observations of rodent activity indoors was noted

5. Administrative
- Permit posted and up-to-date
- Staff member on duty, in absence of the owner, has FoodSafe 1 (expiry: January 2023)
