Observation: Two work tables used for cutting dough are made of plywood which is absorbent and not easily cleanable.
Black garbage bag used for covering rolled dough - this is not a food grade material
Thin wood slats are used in the small upright freezers to separate the baskets that hold the frozen dumplings - these can also absorb dirt/debris and are not easily cleanable.
Corrective Action(s): Replace the above noted items with durable, easily cleanable, food grade materials.

Note: Staff stated that there is currently a dough processing machine being installed that will replace the need for the plywood work tables and thin wooden slats. Dough machine observed during inspection with a technician working on it. Staff stated that it is expected to be up and running within a week, technician working on machine confirmed this.
*Sanitizer spray bottle available during inspection but was unlabelled - label this for quick and accurate identification.
