Routine inspection:
-handsink fully equipped, ensure air conditioner is not in the way of the kitchen handsink
-coolers at 4C or less, equipped with thermometers
-walk in cooler at 2C, food covered and storage appropriately
-freezers at -18C or less
*temperature logs in use for coolers and freezers, ensure the front two cooler temperatures are recorded daily
-no soup in hot holding unit yet for the day
-ice wands used for cooling soups, discussed procedures for cooling soup and reheating leftovers
-fresh soup made for today being checked with probe thermometer at time of inspection to ensure it reaches 74C, usually brought to a boil
-bleach/water spray bottle at 200ppm chlorine for sanitizing
-discussed use of sanitizer for food contact surfaces, bottle of vinegar in front kitchen only used for metal equipment, bleach/water used for food prep cutting boards/counters
-dishwasher sanitizing at 50ppm chlorine and test strips on site for monitoring
