Observation (CORRECTED DURING INSPECTION): Sanitizer bottle located in back kitchen area contained no detectable sanitizer. Note: Bottle almost empty.
Corrective Action(s): Ensure sanitizer is always available at the correct concentration required for effective sanitizing of food contact surfaces (e.g. 100 to 200 ppm chlorine). Change sanitizer solution on a regular basis as often as needed to maintain an effective concentration. Sanitizer solution was prepared at time of inspection and tested at 100 to 200 ppm chlorine.

Observation (CORRECTED DURING INSPECTION): Back hand washing station had no paper towels.
Corrective Action(s): Paper towels provided at time of inspection. Ensure that at all times, all hand washing stations are supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): Three open metal cans of food product were observed within the preparation and upright cooler. Operator stated cans were opened recently--can of pineapple observed to be full.
Corrective Action(s): This is a repeat violation. Further repeat violations may lead to further enforcement action.
Ensure that once cans are opened, the contents are immediately transferred to an appropriate food grade container with a lid.
