301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 3 bowls from the dishwashing cycle were put onto the clean dishware storage area by the cookline without proper air drying. Test strips indicated 100ppm chlorine residual on the bowls. This will cause the food that is placed in the dishware to be contaminated with 100ppm chlorine. 1 bowl had rice debris on it.
Corrective Action(s): Each dishwasher load must be properly air dried prior to storing the items in their clean storage area. Use the drain board as intended by the dishwasher. Rewash and sanitize the bowls properly prior to using. Staff moved them to dirty dishware area in the interim.

Observation (CORRECTED DURING INSPECTION): 1) One insert severely cracked on the inside food contact surface. This cannot be effectively cleaned and sanitized as debris, moisture, and contamination will accumulate in these cracks and crevices. Keep all equipment, utensils, and food contact surfaces in good working order.
2) Mandolin has become black in color with food debris stuck inbetween the blade. Staff mentioned this is for staff lunches only. Original mandolin color is pinkish beige and not supposed to be black.
Corrective Action(s): Discarded plastic insert and mandolin. Ensure to keep all equipment, utensils, and food contact surfaces in good working order.
