Observation (CORRECTED DURING INSPECTION): A large container of au jus was in the walk-in cooler and measured approximately 45-50C. The chef transferred the au jus to smaller containers to faciliate faster cooling at the time of inspection.
Corrective Action(s): Food must be cooled from 60-20C in less than 2 hours and 20-4C in less than 4 hours. Purchase an ice wand to ensure that food is cooled safely.
