Observation: Dishwasher final rinse tested using 2 peak holding thermometers. Final rinse must consistently reach a minimum of 71c on consecutive cycles. Dishwasher reached 71c and 69c in run 1, 66c and 65c in run 2 and 62c and 62c in run 3.
Corrective Action(s): Dishwasher is closed. Contact technician to repair dishwaher asap. Dishwasher cannot be used until I have conducted an inspection to verify it is capable of reaching a minimum of 71c on consecutive final rinse cycles.

Correction: Contact technician to repair dishwasher. Wash utensils in back room 3 comartment sink. Do not use the dishwasher after it has been serviced until I can verify the minimum final rinse temperature is being reached.
