Follow up to Rpt # MBEK-B4XTDR.

- Low temperature dishwasher measured 51 degrees C and 50 to 100 ppm chlorine in rinse residual at the utensil surface (required minimum: 50 ppm chlorine). No soapy residue observed after final rinse.
- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottles throughout kitchen at 200 ppm. Reminder to ensure that if wiping cloths are re-used, they are to be stored in a sanitizing solution between uses.
- Quats sanitizer available from dispenser at 200 ppm. Chemicals are in place at dispenser so labels are facing forward and chemicals can be identified by staff. It was stated by management that staff have been made aware of correct setting to use for dispensing sanitizer.

- Utensils/equipment maintained in sanitary condition
- Areas noted on previous report have been cleaned
- Multiple probe thermometers available on site. Reminder to calibrate thermometers according to manufacturer's directions to maintain accuracy.
