Observation:
Debris found underneath meat slicer blade.
Corrective Action(s):
Clean all hard to reach parts of the meat slicer then use a spray sanitizer to sanitize equipment. To be corrected today.

Observation:
Ice scoop stored directly in the ice machine on top of ice.
Corrective Action(s):
Place scoop in a designated container/plate near the ice machine as a contaminated handle may potentially contaminate the ready-to-eat ice. To be corrected immediately.

Observation:
Cleaning throughout facility needs improvement, especially in the following areas:
- Fan cover of walk-in cooler
- Inside 2-door freezer
- Underneath dishwashing sinks
- General organizing in dry storage area/shelving
Corrective Action(s):
Clean all areas listed above. To be corrected by February 15, 2022.

Observation:
Caulking/silicone around dish washing sinks have heavy accumulation of mould.
Corrective Action(s):
Remove old caulking/silicone, clean all corners and edges thoroughly and then replace with new caulking/silicone. To be corrected by February 15, 2022.

Comments

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
coolers maintained at or below 4C (40F)
freezers maintained below -18C (0F)
hot holding maintained above 60C (140F)
- High temperature dishwasher sanitizing with 73.3 degrees Celsius at dish level after final rinse cycle.
- Concentration of chlorine (bleach) in spray bottle = 200 ppm.
- Washrooms clean and hand sinks fully equipped with liquid soap, paper towels and hot/cold running water.

In addition to the violations above, the following requires your attention:
- Ensure final rinse cycle temperature of dishwasher reaches at least 82C (180F) prior to putting dishes into the dishwasher.
- Replace flickering light bulb above dishwasher.
- Leave wiping cloth in sanitizer solution.
