Observation (CORRECTED DURING INSPECTION): Sanitizer bottle almost empty and had >400ppm QUAT. Bottle was placed at the back and operator had advised surfaces were sanitized last night and not yet today. Inspection conducted 2.5 hours after facility's opening hour. 200ppm QUAT solution prepared in the bottle and staff was advised to sanitize all prep surfaces at this time.
Corrective Action(s): Ensure 200ppm QUAT solution is prepared in the spray bottle and available for use at the front throughout the day. All prep surfaces must be sanitized prior to initiating any food prep in the morning, after each possible contamination and every 2 hours during operation as well.

Routine inspection conducted:
-Handwash station adequately supplied.
-Refrigeration temperatures satisfactory.
Cheese and pepperoni in inserts had internal temperature ~ 8'C. Both just prepared/placed in the unit. Door was closed at this time.
NOTE: Ensure to have the door closed when not in use. When preparing potentially hazardous food, ensure to minimize the prep time- duration of food staying at room temperature.
-3 compartment sink filled with 200ppm QUAT for manual dishwashing.
-Staff washroom handsinks satisfactory. Back storage area satisfactory.
-Traps in place. No evidence of pest activity observed.
-General maintenance and sanitation satisfactory.
