Observation: 1) Opened container of individually portioned dried noodles placed on the undercounter shelf in kitchen.
2) Few opened containers of food observed from the walk-in coolers. (i.e. whole fish, rolls, cooked meat)
3) Opened can of food observed in the prep cooler.
Corrective Action(s): Ensure all foods are covered with food grade materials to protect from contamination at all times. All walk-ins require better organization.
Can foods should be transferred to food grade containers for storage, as chemicals from can may leach into food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas require cleaning:

1) handles/surface of prep coolers
2) undercounter shelf in kitchen
3) inside of all walk-in coolers/freezer
4) floor of back storage room

Observation: Light bulbs in walk-in require replacement to provide adequate lighting in the unit.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating under required temperature of 4'C; Freezer operating under required temperature of -18'C.
-Thermometers available for temperature monitoring.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-200ppm chlorine solution available in a labelled and unlabelled spray bottles. Ensure to label ALL bottles as 'bleach' or 'sanitizer'.
-Not much food stored at this time, as facility had been closed for vacation, and currently only doing take outs before 4:00pm.
-Traps in place. No evidence of pest activity observed at this time.
-Professional pest control company contracted for monthly visits. Ensure to have the reports available on site.
-Washrooms handsinks satisfactory.

NOTE: Ventilation canopy hood overdue for professional cleaning. Contact for service.

General sanitation of the facility other than the areas mentioned above satisfactory - floors underneath, in between and behind equipment.

Letter re:outstanding permit fee ($250.00) hand delivered at this time. Owner not on site. Cheque will be available for the follow-up inspection. OK.
