Observation (CORRECTED DURING INSPECTION): Detergent bottle for dishwasher was completely empty.
Corrective Action(s): Please ensure dishwasher is always supplied with detergent to ensure dishes and utensils are properly washed. Principal had this matter corrected at time of inspection.

Observation: Mouse droppings found under the double sink, under the oven and on the floor of the dry storage room across from the kitchen entrance.
Corrective Action(s): Clean up all mouse droppings and sanitize the affected areas. Please monitor the kitchen and storage areas daily and clean up any droppings as soon as possible. Premise is serviced by a licensed pest control company on a monthly basis using mechanical traps.

Observation: Caulking along counter-wall junction of the backsplash for double sink has cracked.
Corrective Action(s): Please seal the exposed counter-wall junction to eliminate the gap, so as to aid in cleaning and prevent pest harborage.

Comments

General observations:
Refrigerator was 2 degrees Celsius
Freezer was -16 degrees Celsius
Both refrigerator and freezer were equipped with thermometers.
Food storage practices were good.
Organization of storage areas was good.
Bleach sanitizer had a chlorine concentration of 200ppm.
High temperature dishwasher had a final rinse temperature of at least 72.5 degrees Celsius (per maximum recording thermometer).
Liquid soap and paper towels were available for hand washing.
Center island where hand sink is located is typically cleared of all items after the chef finishes for the day. Discussed with Principal to ensure liquid hand soap is available beside the hand sink when kitchen is in operation.
All sinks were equipped with hot and cold running water.
General sanitation was good - except as noted above regarding mouse droppings.
Chemicals were stored in a safe manner.

A Workplace COVID-19 Safety Plan is available onsite, and physical distancing measures as well as limitations on visitors to the facility are practiced.
