Observation (CORRECTED DURING INSPECTION): Staff stated that third compartment sink was filled with sanitizer solution (chlorine bleach) for sanitizing dishes. Sanitizer solution was tested and measured only 10 ppm chlorine, which is not adequate for sanitizing (required: 100 to 200 ppm chlorine).
Corrective Action(s): Sanitizer solution prepared (measured amount of bleach added) and was retested at 100 to 200 ppm chlorine. The following was discussed:
- Ensure sanitizer for manual ware washing is maintained at 100 to 200 ppm chlorine bleach. Change as often as necessary to maintain this concentration.
- Instructions for preparing bleach water sanitizer are posted. Additional sign (Punjabi) to be provided, for reference.
- Recommend obtaining chlorine test strips to verify concentration.

Observation: Gap observed between wall and mop sink basin (right side), potentially allowing water to seep onto floor. Pooling water observed on floor to the right of the mop sink.
Corrective Action(s): Remove pooling water today. Have gap sealed to prevent water from leaking onto the floor. Standing water is a potential pest attractant. Date to be corrected by: July 6, 2023.
