Observation (CORRECTED DURING INSPECTION): Metal scrapers stored wedged between wall and back of counter and the knife rack.
corrective action: Staff removed scrapers for cleaning, sanitizing and proper storage. Ensure the scrapers are stored in a sanitary manner that protects cleaned scrapers from becoming contaminated with debris or residues that may be on the walls and between counters.

Observation (CORRECTED DURING INSPECTION): Handsink in the meat preparation area not equipped with paper towels.
Corrective action: Staff restocked the paper towel dispenser during the inspection. Ensure all handsinks are equipped with paper towels, liquid soap and hot/cold running water at all times to allow for proper practice of hand hygiene that reduces the risk of contamination of food or food contact surfaces and reduces the risk of spread of illness.

Comments:
Walk-in coolers measured less than 4 degrees C (required: at or below 4C). Adjoining preparation room under refrigeration measured below 10C (required: at or below 10C).
Cold potentially hazardous items stored in display coolers at or below 4C.
Ensure all coolers are equipped with accurate thermometers.

Two compartment sink available for dishwashing has hot and cold water and drain plugs. Quats dispenser achieved 200ppm with test strips.
Three QUATs surface sanitizer spray bottles achieved 200ppm with test strips.

Handsinks were equipped with hot and cold running water, liquid soap and paper towel (except as noted in code 401 above).
Staff exhibit proper hygiene. Clean attire (aprons) and hair nets worn.

Storage of food in coolers observed off the ground and protected from contamination.
No signs of pests observed during inspection.
