Follow-up inspection to the routine conducted on July 31, 2020 (RPT#: 246786). Deficiencies noted in the previous inspection have been resolved: Ice machine maintained in good sanitary condition QUATS sanitizer containers measure at approximately 200 ppm Chicken hot-held inside of inserts were maintained at >=60C internally. Hot-holding logs are conducted hourly for the chicken and were up-to-date at time of inspection Additionally, the operator has adjusted the hot water entering the low-temperature dishwasher so that the wash cycle is now maintained at 120F.
