Observation (CORRECTED DURING INSPECTION):
Cloth towels have been found to be stored on counter tops and around waists when not in use. Cloth towels will allow bacteria to grow on it as it sits at room temperature.
Corrective Action(s):
All cloth towels MUST be stored in a bucket of sanitizer when not in use, as this will kill any bacteria. The sanitizer in the bucket SHALL be changed every 2-3 hours. Inform all staff of this change. During the inspection, buckets of sanitizer was being set up.

Observation:
The back wall, behind & beneath the flat grill, and the side wall of the gas range has some accumulated grease & food on them. This grease will attract pests.
Corrective Action(s):
Wash the mentioned areas with hot water and soap. These areas shall be washed at the end of EACH day to remove food and grease.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezers were -14C; hot holding units above 60C; and thermometers present.
- High temperature dishwasher rinse cycle was 77.7C at the plate's surface, as per max/min thermometer.
- Hand sink was stocked with liquid soap, paper towel, and running hot and cold water.
- Foods stored in food grade containers; covered; dated coded; labeled; foods stored in groups with proteins on the lowest shelves, below RTE foods; and foods stored 6" off the floor on shelves.
- General sanitation level is adequate, improvement needed in mentioned areas. Ceiling tiles are clean and absent of dust. Interior surfaces of ice machine are clean.
- Quats sanitizer was 200ppm in spray bottles. Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- No signs of pests.
- FoodSafe certified staff present.
- No expired foods in use or for sale. FIFO rules being followed.
