Observation: (1) Personal food observed in the chest freezer and upright white refridgerator/freezer.
(2) Open bag of sugar observed on the ground in the dry storage room.
(3) Food (eg. seasoning boxes, oil) stored on the floor in the dry storage room.
(3) Cleaning products (Mr. Clean) stored next to food in the dry storage.
Corrective Action(s): (1) Store personal food away foods served to the public to prevent contamination.

(2) Store opened bags of dry ingredients in pest proof containers. Operator stated the pest proof container is on order and will arrive in a week. In the meantime, seal open bag of sugar and store off the floor.

- Handsinks supplied with hold hot/cold running water, liquid soap, and paper towels.
- Coolers at/below 4C; freezers at/below -18C.
- Bleach sanitizer spray bottle measured at 200 ppm.
- 3 compartment sink available for manual warewashing. Sink plugs present.
- Timers in use for chicken cook times. Probe thermometer on site.
- Chicken are made in small batches (first fry) and then fried again on order. Operator reports chicken batches are usually sold within 1 hour. Operator to use timer or log to track time - any unsold chicken must be discarded after 2 hours.
- No pests noted during the inspection.
- Permit posted.

2. Reminder gloves are one time use only . Used pair of gloves observed on the prep table; staff discarded during the inspection - management to train staff.
